三到五月,是桑椹盛產的季節

每年這個時候,姊夫都會自己和家人熬一些桑椹果醬

自己熬的,可以隨意調整口味

早餐配麵包,中午做沙拉,下午還可以泡一個水果茶

接下來就跟著姊夫,一起享受這個大自然的恩賜吧!

這可是季節限定喔!

桑椹極富營養。桑椹的脂肪酸主要為亞油酸,屬於不飽和脂肪酸,桑椹中還含有不同量的葡萄糖、果糖、檸檬酸、鞣酸、蘋果酸及豐富的維他命。

This is limited by season!

Mulberry is very nutritious. The fatty acid of mulberry is mainly linoleic acid, which is an unsaturated fatty acid. Mulberry also contains different amounts of glucose, fructose, citric acid, tannic acid, malic acid and rich vitamins.

我們要準備的材料有:
The materials we need to prepare are:

Season fresh mulberry 季節新鮮桑椹 1200 gm

Sugar 糖 100 gm

Fresh lemon juice 新鮮檸檬汁 30 cc

bay leaves 月桂葉 2 片

Maltose 麥芽糖 50 – 100 gm

Honey 蜂蜜 60 gm

製作步驟:

1. 清洗刀具,砧板,工作檯面,清洗雙手。
2. 桑椹剪掉蒂頭,於流動的清水浸泡,並換水三次,瀝乾。
3. 預熱不鏽鋼鍋,加入白糖,炒成焦糖。
4. 分兩次加入桑椹煮。(請小心噴濺)
5. 加入檸檬汁。
6. 加入麥芽糖。
7. 大約煮30分鐘。
8. 煮一鍋清水,消毒容器。
9. 加入月桂葉。
10. 加入蜂蜜,大約煮60分鐘,濃縮。
11. 煮至濃稠,試過味道後,裝瓶。
12. 容器瓶身蓋緊後,趁熱倒置,果醬於容器內將呈真空狀態。
13. 常溫未開封可放2-3 個禮拜,開封後請儲存於冰箱冷藏,並儘快食用完畢。

Production steps:

2. Cut off the stem of the mulberry, soak it in flowing water, change the water three times, and drain.
3. Preheat the stainless steel pot, add sugar and fry it into caramel.
4. Add mulberry in two portions and cook. (Please splash carefully)
5. Add lemon juice.
6. Add maltose.
7. Cook for about 30 minutes.
8. Boil a pot of water and disinfect the container.
9. Add bay leaf.
10. Add honey, Concentrate for about 60 minutes..
11. Cook until thick. After trying the flavor, bottle it.
12. After the container is tightly capped, turn it upside down while hot, the jam will be in a vacuum state in the container.
13. Unopened at room temperature can be stored for 3-4 weeks. After opening, please store in the refrigerator and refrigerate, and eat as soon as possible.

注意事項:

* 桑椹含果酸,請避免使用鐵製鍋具熬煮。

* 因為酸性材料會溶解鐵製鍋具表層的物質,會直接影響風味。

* 所以請選用不鏽鋼材質或陶瓷類的鍋具操作。

* 桑椹果膠含量較少,姊夫沒有用動物膠或其他材料增加膠質。

* 姊夫只用麥芽糖和蜂蜜等比較天然的食材增加濃度。

Matters needing attention:
* Mulberry contains fruit acid, please avoid using iron pans for cooking.

* Because acidic materials will dissolve substances on the surface of iron cookware, it will directly affect the flavor.

* So please select stainless steel pots or ceramics for operation.

* The natural pectin content of mulberry is relatively low. I did not use animal pectin or other materials to increase the pectin content.

* I only use natural ingredients such as maltose and honey to increase the concentration.
